My Granny made lots of Potato Cakes in the olden days. It was a simple food with simple ingredients but tasted delicious.
The ingredients were freshly boiled potatoes and a few scoops of flour and a pinch of salt. The potatoes were mashed and the flour kneaded through them. It was flattened into a plate shape and divided into segments.
The griddle pan was placed on open coals until it was red hot. The griddle was dusted with flour and potato cakes were placed on it. They cooked slowly until golden brown, crust formed. When serving they were split in the middle with twine and loaded with beautiful freshly churned butter.
