Potato Dumplings
This is my great grandmother’s recipe that her mother taught her for using leftover potatoes. We always have potato dumplings on St Stephen’s Day.
Ingredients
- Cold mashed potatoes
- Herbs
- Egg
- Breadcrumbs
- Seasoning
Method
Place the cold mashed potatoes in a bowl. Add herbs, salt and pepper seasoning. Mix together. Beat the egg. Take a handful of the mixture and roll into a ball. Dip the balls in the egg mixture. Then dip into the breadcrumbs. Cook in a hot oven until golden brown.

What a great idea to make these on St Stephen’s Day. We always have loads of mash left over from Christmas Day. This year I’m going to remember this recipe and try it out St Stephen’s Day 2018. Thanks Keela!
