Fresh Sponge Cake with cream and jam.

My Nanny Helen gave me this recipe for Sponge Cake

6 Eggs

Weight of 5 Eggs = the amount of Caster Sugar

Weight of 4 Eggs = the amount of Flour

Beat the eggs and the sugar until they go creamy.  Fold in the flour.

Put into two sponge trays/tins.  Cook in a hot oven for 10 to 15 minutes.  Take out and let cake cool.  Then put cream and jam in the middle and you will have a beautiful old sponge cake.
