Great Gran's Porter Cake

Porter Cake Ingredients

  • ½ lb Butter
  • ½ lb Sugar
  • 4 Eggs
  • 1 lb Flour
  • ½ teaspoon Spice
  • ¼ teaspoon Bread Soda
  • 1 lb Raisins
  • Rind of Lemon
  • ½ Bottle Stout (¼ pint)

Method

Cream butter and sugar.  Sieve Flour, Spice and Bread Soda and add alternatively with beaten Eggs to mixture.  Add Raisins and Lemon Rind and lastly add the Stout.  Bake for 1½ hours.

Recipe for Porter Cake in my great granny’s own handwriting.

Note: My great grandmother’s recipe did not give any directions about baking as she would probably have baked the cake in a pot on an open fire and later probably in the range.  There was no gas or electricity when she was baking in the 1920s, 30s, 40s and 50s.
