Ingredients
- 3 lbs Potatoes
- 2 Minced Shallots
- 1/2 Cup Chopped Scallions
- 4 Cups Chopped Green Kale, cabbage or other leafy greens
- 4 Ozs Butter
- 3/4 Teaspoon Salt
- 1/4 Teaspoon White Pepper
- 1 cup milk or cream
Method
Peel potatoes, cut into large chunks, cover with cold water, add 2 teaspoons salt and boil until potatoes are fork tender – 15 to 20 minutes. Drain and mash with milk or cream.
While potatoes are cooking prepare greens and cook with melted butter for 3 or 4 minutes, add the shallots and scallions and cook for further minute.
Mix greens into mashed potatoes, flavour to taste. Serve hot with knob of butter in the centre.
