My Granny told me the story of how they would make black pudding. They would kill a pig and drain the blood into a bucket. One person would have to keep stirring it to keep the blood from clotting.
When it had cooled, they would add onions, oatmeal and lard from the pig. They would clean the intestines of the pig and turn them inside out. The pudding mixture was put into these. The puddings were then boiled in a large pot and all the neighbours got one as they had no fridges to store food.
