Griddle used to make Griddle Bread or Scones

My great granny is 98 years old.  Her name is Tesie Kennedy.  She lived in Shannon Hill, Power’s Cross when she was young.  One of her memories is making griddle bread.

The bread was made with flour and Indian meal and butter milk.  Griddle bread was cooked on a griddle and flattening it out and put over hot coals.  You would turn it over every so often until brown.

It was a favourite of theirs and they would have some fried rashers with it.
