Sometimes as a treat my Granny would make this for my Mammy and her sisters when they were little.  She used slices of bread without the crusts and spread butter on them. She used six slices and she cut them into triangles.

She put half into an over dish and sprinkled them with currants and sultanas and some sugar too.  Then Granny put the rest of the bread on top and sprinkled the last of the fruit on top of that.  She beat an egg and milk together and poured this over the bread.

It was left to stand for thirty minutes, then baked for forty five minutes to one hour until brown on top.

The girls loved it and it was Mammy’s favourite treat.
