My Granny would make oxtail stew for my Dad and his brothers and sisters for when they came home from school.
She would have put Pearl Barley in a large pot to soak in water for an hour. She then would put the whole of the ox’s tail into the pot and cook it for 20 minutes. Then she would put in vegetables like carrots, parsnip, turnip, onion into the pot as well. She would add potatoes cut in half also. Then cooking for a half hour she would put the whole mix into an oven pot and roast for 30 minutes. My Dad said it was delicious to eat.
