
Dublin Coddle
Ingredients
- 8 Potatoes
- 4 Onions
- 8 Back Rashers
- 8 Sausages
- Pepper
Method
Peel the potatoes and put into a medium saucepan. Cut onions into chunks. Lay rashers and sausages on top. Cover with cold water and bring to the boil. Add pepper. Cover and simmer for about an hour.
