Dublin Coddle


  • 8 Potatoes
  • 4 Onions
  • 8 Back Rashers
  • 8 Sausages
  • Pepper


Peel the potatoes and put into a medium saucepan.  Cut onions into chunks. Lay rashers and sausages on top.  Cover with cold water and bring to the boil.  Add pepper.  Cover and simmer for about an hour.
