Porridge Bread

My Mam makes nice porridge bread.  She makes it once or twice a week.  She has been making it for four years now.  Sometimes I help her make it as it is very easy to make.  When all the ingredients are mixed together it goes into the tin to cook for 45 to 50 minutes in the oven.  My mother listens to the bread to make sure the bread is cooked.  If you can hear the porridge oats popping it needs a few more minutes.

My Mam’s favourite part of making the bread is when it is still warm, she cuts a slice of it and has it with butter.  I sometimes bring it for lunch.  It’s a healthy loaf because it is gluten free and sugar free.  My mother sometimes makes it for my Granny and Granddad.

Ingredients

  • 500g Natural Yogurt
  • 2 Yogurt tubs of porridge oats (use the empty yogurt tub to measure out 2 full tubs of oats)
  • 1 Egg
  • 2 tablespoons of bread soda
  • 1 tablespoon of Milk
  • 2 tablespoons of Honey
  • Optional: 1 cup of chia seeds, sunflower seeds, pumpkin seeds or crushed walnuts
