
Tea Brack
My Mam makes a tea back mostly for funerals and stations but she sometimes makes it for me and my family or when other friends or relations come over. She makes it in batches of two usually but when it’s just ourselves she only makes one, Sometimes she bakes it in the range. The range is roughly 100 years old. She uses Lyons tea for the back.
Ingredients
- 12oz/360g Mixed Fruit
- 1 Mug of Tea
- 2 teaspoons Mixed Spice
- 1 Egg beaten
- 8oz/240g Self-Raising Flour
Method
Put fruit in bowl with tea and soak overnight. Add dry ingredients to fruit. Add egg and mix. Pour mixture into 2lb loaf tin and bake for 50 minutes approximately at 180oC.
