My grandmother would have cooked this for her children and she did it the same way as her mother would have cooked it.
I think it was nutritious for them as there would not have been much variety in food in those times. We are not sure how often Granny herself had it as a child but my Dad would have it once a month anyway. The head would have been got in the butcher’s then.
As a girl Granny would have had it from one of their own pigs or neighbours’ pigs. They would share the meat. There would be a good amount of it.
